How to make "ecological" wine
Producing an ecologic
wine requires an almost total change in how the whole wine yard is run, from
how and what fertilizer the vines are given to how the vine grapes are
picked when harvested and of course how the wine is produced.
I would like to run
my vineyard fully ecological. The ecological fertilizer comes from compost,
electricity comes from solar panels and wind generators to supply both my
living and the vineyard with pumped water and
the vinery with electricity enough for manufacturing. As much as possible of
the production line should be powerless, de-steamers and presses can be hand
operated, so can pumps, bottling and labelling of the wine. The control of
the fermentation process needs to have electricity but this could also be
supplied by solar-panels. The whole harvesting of the vine grapes would need
to be done by hand.
I think I would by a
wooden log house to live in and build the winery in wood as well. Perhaps
adding one or two small log cabins to house tourists in. Then I could charge
people to come and help out with the harvesting of ecological grown vines!
Labels would be printed on recycled paper and packed in wooden cases (ok,
that might be too expensive) or at least made from recycled paper. Best
would be to market and sell a wine like that in North of Europe, and then of
course transporting it on a chartered old sailing-ship with paying clients,
what a great marketing source! Sail it up once and you would get lots of
free press, and perhaps the paying guest on the ship would drink all the
wine before it arrived!

Growing ecological is fast becoming the new way for vineyards
to get better paid and find new markets for European wine makers and vineyards.
Vineyards in Europe has lost a large part of the traditional european wine
market to "new world" wine makers and vineyards, but have found that ecological
wines are bringing back the buyers! European customers prefer European wine
makers and vineyards when chooing a organic made wine before the "new world
wines" as they simpley trust the wines being made ecological when made in Europe
with its rather strict rules for what can be called "organic"
